In case you were wondering why there is no apostrophe in the name "Lees" - it's because the word "Lees" refers to deposits of residual yeast and other particles that precipitate to the bottom of a vat of wine after fermentation and aging. We thought that would be different and more interesting than "Lee's" with an apostrophe!
